Trick or Treating always gets me thinking PUMPKIN. Pumpkins are an indication that my favorite time of year is quickly approaching. 🙂
Can’t you just smell the scent of it? Pumpkins, cinnamon, and apples.
The busyness in the kitchen, making those favorite family treats that have you reminiscing about wonderful family memories and traditions like helping Grandma make gingerbread houses, festive cookies and hot apple cider.
Maybe is sugar cookies, or Pumpkin Pie. Hot sweet potato casseroles that taste as good cold as they do fresh out of the oven with melted mini marshmallows burning your mouth. Enjoying seeing family members or friends who may have moved away but always manage to come back home this wonderful time of the year.
Maybe you remember your first time camping and Toasting marshmallows, making s’mores & singing ’round the campfire. Feeling the crisp cold air on your face, and seeing stars that twinkle like diamonds overhead.

Here is one of my family’s favorite-Chocolate Chip Pumpkin Muffins. This recipe was given to me by a co-worker from Minot, ND. I don’t know why I don’t make it more often than just at the holiday time of year, but every time I make them I think of Carol.
I trust it will soon become a family holiday favorite too! Although, there’s NO reason why you can’t make it year ‘round.
The Best Chocolate Chip Pumpkin Muffins
Mix together:
1 ½ cups Sugar
1/4 tsp. Baking Powder
1/2 tsp. Nutmeg
1/2 tsp Cinnamon
1 2/3 cups All purpose Flour
1/2 tsp Ground Cloves
1 tsp. Baking Soda
3/4 tsp Salt
Add: 1/2 cup Vegetable Oil
2 Eggs
1 Can (15oz.) Pumpkin
1/2 cup Water
Beat all ingredients thoroughly.
Add approximately 1 cup of Chocolate Chips. Pour into (well greased or use baking cups in muffin tins.
Bake 20-25 minutes in 350 degree oven. Yields: 30 large muffins.
I ALWAYS double this recipe and mix both large and mini muffin sizes, and use baking cups.
Options: Add or substitute raisins, pecans, walnuts.
